My only complaint is that the temperature selection is a series of ranges, but I knew that before purchasing it, so it's not a big issue.
I noticed that the dehydrator was not reaching the temperature at the numbers I set it at. I cranked it all the way up and it got about 20 degrees hotter than the dial claims is the max temp.
The highest setting of the dehydrator is 140-158 F, but it couldn't maintain the temperature above 125 F even after several hours with meat in it. Anything lower than 140 F allows dangerous bacterial growth.

I am impressed with the temperature control of this dehydrator. It has two tray height settings and maintains a consistent temperature throughout the cycle. I even checked the temperature with an infrared thermometer.
I had to crank up the temperature to get the desired numbers and it exceeded the max temperature by 20 degrees.
