    The product is shaped like a chip cookie, which makes it easy to measure when baking, but it will melt completely.


    If you like milk chocolate, this is excellent for ganaches and mousses, although I would lean towards less than 70% for a more bitter ganache or mousse.


    The package was very impressive and I haven't tried the chocolate yet but I think it's going to be great. I haven't tried the chocolate yet but if it's anything like the quality of the packing it's going to be excellent.


    I don't recommend baking couverture chocolate as it is ground to a fine texture and has a higher percentage of cocoa butter than other ingredients, such as sugar or vanilla.


    I think it's right if I add cocoa powder or extra bitter chocolate to a recipe to make it less sweet, it works very well.

    Are these Callets suitable for eating directly, as in the trail-mix? Or are they intended for baking and too bitter on it's own, though they are sweetened?

    A:

    I wouldn't use it in trail mix because it was the best tasting chocolate I had ever tasted.

    What precautions are used for shipping and delivery during the summer?

    A:

    In the summer we ship chocolate only via FedEx Overnight, and ice/gel packs will be added to keep the chocolate cold.

    What is the difference between these callets and the "Barry Callebaut" chips on Amazon?

    A:

    I don't know the full answer, but I can tell you that "Callebaut" was established in Belgium in the mid 1800s, and "Cacao Barry" was established in France in the mid 1800s.

    Can I use this for making chocolate cake?

    I only use it for the ganache for the chocolate cake, but not the cake itself.

    Is it necessary to temper this chocolate if it will be covered with almonds?

    A:

    Callebaut chocolate is already tempered straight out of the bag, but like any couverture chocolate it will lose its temper once it gets above 90F/32C.
