I made many seitan and Chinese noodle which require a lot of kneading and some mixing. It works great except one thing.
I leave the mixer on setting 2 for 5 to 10 minutes and have had no problems, which shows its efficiency in terms of mixing time.
There's a raised spot in the bowl's middle, so after mixing, some mix doesn't get touched around it. So, I need to use a spatula to mix everything one last time before pouring it into the pan.
