I get a perfect rare sear every time.
I found the thermometer to be accurate as it matches the air temperature in the house when opened and changes instantly when placed in the food to be tested. I also used it over the weekend to verify the existing temperature probe we have for meat in our smoker, and it was within 2 degrees of the probe temp every time I checked.
I compared the accuracy of the product to the industry leading Thermapen and found it to be comparable, although not as fast.
