I assumed the thermometer is accurate as the initial temperature reading matched the room temperature.
I trusted the thermometer completely and took the roast out when it hit 130 degrees, resulting in a perfect medium-rare hunk of beef.
I noticed a 20 degree temperature difference between my old and new thermometers. My original thermometer had a +/- 2 degree accuracy and I was thankful that I used both to compare or my prime rib would have been ruined as this thermometer was still reading less than 100 degrees when the prime rib was ready.
