I was initially worried about the capacity of my electric-water-heater as I purchased a smaller one. However, I ended up lowering the temperature on it to save more energy.
Based on my calculations, I would need a 125 amp service panel for the things inside my home.
The electric tankless heater has a capacity of 18kw and requires 2:40 amp breakers, which means 80 amps out of my 200 amp box.
