The electric-induction-range gets really hot really fast because it is thin.
I can quickly reheat the electric-induction-range when empty and get a beautiful sear. I can cook a pound of meat, dump it, and it's hot enough for the next pound in about 30-45 seconds at 560F.
It's convenient to start a stir fry in 2 minutes instead of waiting for 10-15 minutes for an electric coil to fully heat up.
As soon as I drop food, the heat disappears and it takes too long to come back to temperature.
