The DIY setting on my Pohl-Schmitt machine is better than any pre-programmed, gluten-free setting on another machine. It can be easily programmed to mix, rest and rise only once or multiple times, and for the length of time the recipe requires. Then it bakes beautifully for as long as it is set to bake.
